To clean the broiler pan, sprinkle the hot pan heavily with drylaundry detergent. Cover with a dampened paper towel and let theburned food set for a while. The pan should require little scouring.When broiling, put a cup of water in the bottom of the broiler panbefore starting. Cleanup is easier, and the drippings create instantgravy. This also eliminates smoke.

Cracked eggs
If shell cracks while egg is boiling, add a few drops of vinegar to the water. Use eggs at room temperature. To prevent cracking, place eggs that have been refrigerated for along time in room temperature for a short while before adding to boiling water.

FRENCH FRIES
To make better French fries just soak fresh-cut potatoes in water for five minutes, drain and pat dry before cooking to remove the excess starch that causes them to clump together (and from keeping them from sticking to the pan while cooking). For extra crispy fries just dust them lightly with flour before you fry.(restaurants use this great tip!)

Clean stainless steel burner pans on stoves by puttingthem in a large pan, adding enough water to cover,and 3/4 to 1 cup baking soda. Simmer on low for about 1 hour,then wash with regular detergent. Any stains that remaincan be removed by ribbing lightly with a steel wool soap pad.
